charging voltage should be 14.2v-14.4v tops. This might drop down slightly if you have LED accessory lights on/high beam/heated grips etc. But the charging voltage should still be stable.

i would imagine the fuel pump switches off, which would drop off some pressure. As the F800 does not have a fuel return pipe, its always pressurised up to the the rail (as far as i know/am aware)
